Autumn Dinner!

I was definitely in a cooking mood today.  I made:

1.  Pumpkin Curry Soup

2.  Applesauce

3.  Roasted Pumpkin Seeds

4.  Pumpkin Puree

5.  Irish Creme Brownies

Yum!  We enjoyed the soup, applesauce, and some bread from Trader Joe’s with Kelley while we watched Bones and Fringe.  Okay, Dan only watched Bones because Fringe is too weird for him. 😉  Sadly, these shows are on at the same time as Grey’s… thank goodness they put the episodes online!  If you watched the premiere, don’t give anything away, please!


First up was the applesauce.  I mixed apples, cinnamon, nutmeg, allspice, brown sugar, water and lemon juice in the crock pot and cooked it on high for 3 hours.  It started off looking like this:

IMG_3102Okay, the picture is horrible and fuzzy.  I’ll take a better one when I eat the leftovers. 🙂

Pumpkin Curry Soup:

IMG_3105I got the recipe from one of the stands at the Farmer’s Market.  Sadly, I was not impressed by this soup.  It was very bland.  Adding some curry powder and pepitas certainly helped.  I think I’m going to freeze the leftovers, and add lots of veggies and more seasoning to it when I eat it later!


I used a Cooking Light recipe that I found here. Since I have no eggs, I tried combining 1 T. ground flaxseed and 3 T. of warm water to replace each egg.  Unfortunately, it didn’t quite work, so the brownies were very crumbly.  But still delicious.  And totally worth using up the last of my chocolate and Bailey’s.

Field Trip!

Went to bed right after “Glee” and feel so much better now!  Not a 100%, but getting there! 🙂

In my rush to get out the door for today’s field trip, I neglected to take a picture of my breakfast.  Again.  It was the same breakfast as yesterday, though. 🙂

Field Trip

For our Senior Design project, my team is creating a publication on how to produce and sell your own apple cider in a sustainable way.  As part of our research, we got to visit a nearby orchard to watch them produce their cider.  It was really cool!  I know which stand I’m getting my cider from at the Farmer’s Market this week. 🙂  Especially since it contains only juice.  No sugar.  No preservatives.  Nothing but apples.

After our field trip, I decided to get my run for the day in.  My energy was flagging a bit, and my motivation was low, so I decided to run 2 miles, but at a faster pace than I’m usually comfortable with.  I ran fast!

I’m still feeling a little “off” today, so I decided some comfort food was in order…

Comfort Food

I was in the mood for the ultimate “comfort food” today… mac & cheese.  Yes, I occasionally eat the boxed stuff.  This one was alfredo though:

IMG_3098the last of my green bean & carrot leftovers. I got just enough pasta to satisfy my craving, and the veggies filled me up!  On my way out the door, I may or may not have also grabbed one of the last PB cookies I made last week.  🙂
