More pumpkin butter…

Today’s food was spread out throughout the day, because I have so many classes back to back!

First up,IMG_3065Sandwich Thin + Almond Butter + Pumpkin Butter + Apple Slices. Absolutely amazing!  It tastes like fall in sandwich form. 🙂

Two classes later…

IMG_3062Strawberry Chobani yogurt + Muesli (not pictured).

Another two classes later,

IMG_3061Two huge carrots with Jalapeno hummus.

I’m thinking I might experiment with a pumpkin/squash curry soup tonight… details to come!

Health-ified Cincinnati Chili Passed Out…

    So my favorite foods are orange, and lucky for me TODAY is the FIRST day for Fall! Yeah for K!
    I love this soup:
    Saute 1/4 C leek and onions and 3 minced garlic in a little olive oil and 1 tablespoon curry
    Pour 3 C. broth
    Add in chunks of squash, around 2 c. (softened in microwave for 3 minutes)
    Simmer for 20
    Blend up
    Add in 1 C. apple or pear, chopped
    Simmer for 10
    Serve with a dollop of yogurt!
